Hi, thank you for coming to my blog. As you know Koji is the raw material for ferment food such as sake, miso, soy sauce and vinegar in Japan. And Koji is made from rice, soy bean or barley. Recently salt-koji is getting more and more popular in Japan. I made it of course! And now my boom is soy sauce-koji. It's also delicious and healthy!!
I cooked this side dish with handmade soy sauce-koji.
