Have you ever looked or eaten Udo and Urui? They are Japanese seasonal mountain vegetables in spring.
And we have to save electricity recently in Japan, so I made the salad by using these vegetables, but not using electricity.
Then, I'd like to show you these photos and tell about these vegetables.
【About Udo】 The place of origin: Japan The source: Akita Prefecture Character: They have a unique smell and white and crisp stalk. We write "独活" by Kanji from swinging even if it is windless. It mean acting alone.
Ingredients: Udo, grapefruit, Boiled broad bean, red paprika. Dressing: Wine vinegar, EV olive oil, rosemary, salt and pepper. Notes: After cutting Udo,please dip it into the vinegar water quickly to take out the Udo's bitterness.
【About Urui】 The place of origin: East Asia The source: Yamagata Prefecture Character: They have a little slimy. It is called "Giboushi","Takina" or "Yamakanpyou" as another name.
Ingredients: Urui, cucumber, radish, orange. Dressing1: yogurt, mayonnaise, yuzu pepper. Dressing2: mayonnaise, tomato powder, salt and pepper. Dressing3: ponzu(soy sauce, lemmon, salt and pepper) ,shiso oil.
